Lemon coconut cupcakes

My other interest apart from sewing and my two kidlets is cooking.

Today I made Lemon coconut cupcakes.

Makes 12. Prep 20min. Cooking 20min.

1 cup self raising flour
1/2 cup desdicated coconut
1/2 cup caster sugar
2 eggs
160ml coconut milk
3tsp lemon zest
125gm butter melted and cooled.

Coconut icing

2 cups icing sugar
30gm butter soft
1 & 1/2tbsp boiling water
Moist coconut flakes.

1. Preheat oven to 170c or 150c fan forced and line mufgin tray with patty pans. Place flour, coconut and sugar in bowl and make well in centre.

2. Use a fork to whisk eggs, coconut milk and zest in a jug. Add to dry mix along with butter. Fold together until just combined. Spoon into patty cases and bake for 20min. Leave in tins for 5min and lift onto wire rack to cool.

3. Sift icing sugar into a bowl and add butter. Pour boiling water onto butter to melt it and stir til smooth. Spread on top of cupcakes and top with coconut flakes and leave to set.

4. Enjoy with a nice cup of tea or coffee.

Birthday came early....

My birthday which isn't for another few weeks came early last Thursday in the form of a new sewing machine!! This is something I had only dreamed of until recently, a computerised/digital machine that is easy to use!! Much of my time over the past few days has been dedicated to learning how to use my new machine and hopefully some new style owls will be produced shortly...

Currently I have lots of ideas but have had no time to put them into action so keep your eyes out for new products appearing shortly...

Currently there is a little bit of a backlog on custom orders but there are plenty of items ready made if anyone is interested just let me know what you are after... I have a few bibs, facewashers, burp cloths and heatpacks and owls ready made and available to be posted as soon as payments clear.

Hi All so this is my first real post on here, thought it was about time that I got started so I could keep you all up to date properly with what is going on at Owls n' Stuff headquarters.

Things have been a little quiet around here for the past year because of our little Owllet William and all his issues. He has just turned 1yo (where did that time go?) so I am trying to get back into the swing of things.
