My other interest apart from sewing and my two kidlets is cooking.
Today I made Lemon coconut cupcakes.
Makes 12. Prep 20min. Cooking 20min.
1 cup self raising flour
1/2 cup desdicated coconut
1/2 cup caster sugar
160ml coconut milk
3tsp lemon zest
125gm butter melted and cooled.
2 cups icing sugar
30gm butter soft
1 & 1/2tbsp boiling water
Moist coconut flakes.
1. Preheat oven to 170c or 150c fan forced and line mufgin tray with patty pans. Place flour, coconut and sugar in bowl and make well in centre.
2. Use a fork to whisk eggs, coconut milk and zest in a jug. Add to dry mix along with butter. Fold together until just combined. Spoon into patty cases and bake for 20min. Leave in tins for 5min and lift onto wire rack to cool.
3. Sift icing sugar into a bowl and add butter. Pour boiling water onto butter to melt it and stir til smooth. Spread on top of cupcakes and top with coconut flakes and leave to set.
4. Enjoy with a nice cup of tea or coffee.
